Question

I just realized that I entered the wrong secret on the configuration screen. I re-programmed the system, but it must still be reading the wrong secret in the SPIFFS file.

How can I reset the device so I can enter the correct information?

By getting into configuration mode: press and hold the left button, then press and release the right (reset) button, then release the left button. Now you should be back in configuration mode where you can set your WiFi credentials. 

If that doesn't help: there is a line SPIFFS.format() in the main class. Uncomment it so that the file system will be formatted. Then you should get into configuration mode automatically...
