The web interface gave us the possibility to easily customize our stations. However, the drag and drop functionality is quite limited since we can basically only move things around.

There are no separate variables to be added, like humidity, sunrise, preciptation, etc...

Are there any plans to add separate items to the weather widget? Or at least some documentation with the variables that are used on the template (when we double click on an item)?

You can ungroup the widget (icon in toolbar on the left) and then edit the individual components.

A lot of it depends on feedback we get from users like you. We have our own plans but we also take into consideration what users miss. It's true that currently you need derive variable values from the examples we provide and adapt them to the OWM API responses as per https://openweathermap.org/api. Those expressions are evaluated by the Freemarker templating engine. Hence, you can mix-in Freemarker conditions, aggregations, etc.
